Adventures in Protein

What an amazing class!  We had such a great time last week talking about the many protein myths out there.  You certainly don't have to be vegetarian or a raw foodist to get the benefits of whole foods like fresh veggies, fruits, nuts seeds and grains...and if you DO decide not to eat animal products for a day, a week or longer, there are plenty of protein choices for you!

For example, our menu last week took us through some of what we feel are the best plant based protein sources out there:

Kale Salad - full of calcium, protein, vitamins and minerals - and because our salad is totally raw, all the living enzymes are available too!

Then there's Audrey's Sunflower Apple Almond Bread - full of protein and totally gluten-free!

Chef Wendell wowed the class with his Borracho Beans and Tempeh Sloppy Joes - delicious twists on the original versions that are usually full of animal fat, refined sugars and cooked until all the life is totally gone.  These recipes are so simple and so tasty, our lovely kitchen helpers were nibbling on the left overs at the end of the night!
